Brunch Raclette

Brunch Raclette (by Emmi Swiss Raclette)

Preparation 15 minutes | Servings: 4


1 pack of Emmi Sliced Raclette 200 g

For the mini-omelets:
4 eggs
125 ml (1/2 cup) milk
1/3 diced red pepper
1/3 diced green bell pepper
1/2 chopped red onion
Salt and pepper
15 ml (1 tbsp) chopped chives

For the fruit casseroles:
125 ml (1/2 cup) grapes, sliced in two
1 sliced apple
1 sliced pear
1/4 diced cantaloupe
30 ml (2 tbsp) maple syrup

Preparation Method

1. Turn on the Raclette grill.
2. In a bowl, whip eggs and milk together.
3. Add peppers, red onion, salt and pepper and stir.
4. Divide the egg mix and pour into the small Raclette pans. Top with half the slices of
Emmi Raclette cheese.
5. Cook under the grill for 8 – 10 minutes, until the omelets are cooked and the
cheese melted. Garnish with chives.
6. Divide the fruit in the small Raclette pans. Drizzle with syrup and garnish with the
other half of Emmi Sliced Raclette cheese.
7. Melt the cheese under the grill for a few minutes.
