Ingredients
Fruit coulis:
- 250 ml (1 cup) thawed frozen fruit mix or fresh small fruits
- 15 ml (1 tbsp.) maple syrup
- 20 ml (4 tsp.) ground flaxseed
Yogurt flan:
- 30 ml (2 tbsp.) cold water
- 7.5 ml (1/2 tbsp.) or ½ gelatine pouch
- 75 ml (1/3 cup) hot milk
- 375 ml (1 1/2 cup) Vanilla Yoplait Yoptimal
Preparation
In a small saucepan, mix the small fruits and the maple syrup. Bring to a boil, then lower heat and simmer on low heat for about 5 minutes. Reduce in a blender and add the ground flaxseed. Pour the fruit coulis into four ramequins and let cool.
- Pour the water into a bowl and pour the contents of the ½ gelatine pouch on top. Let rise for a few seconds. Liquefy the gelatine by heating the mixture for a few seconds in the microwave. Add the hot milk and mix well.
- Incorporate the yogurt and mix until smooth and homogenous. Carefully pour the yogurt onto the fruit coulis.
- Refrigerate until set.
- De-mould by sliding the edge of a thin knife around the ramequins to detach the panna cotta. Turn over onto a dessert plate and serve.
Tips and tricks
This fast and simple dessert can be made with fresh fruit in season (mango, passion fruits, raspberries, etc.) or frozen fruits. The vanilla yogurt is a great substitute for the vanilla beans which are traditionally used in this classic Italian dessert.
