Ingredients
Stewed fruits
- 2 unpeeled Cortland type apples, diced
- 12 pitted prunes
- 45 ml (3 tbsp.) water
Nutty French Toast
- 75 ml (1/3 cup) milk
- 45 ml (3 tbsp.) maple syrup
- 2 eggs
- 15 ml (1 tbsp.) melted butter
- 4 slice of nut bread
Garnish
- 125 ml (1/2 cup) Vanilla Yoplait Yoptimal
- 20 ml (4 tsp.) walnuts, chopped
Preparation
- In a saucepan, cook the apples, prunes and water on medium heat, stirring occasionally for about 15 minutes or until the fruits are very tender. Reduce the preparation using a spoon to obtain a thick puree or put through the blender to obtain a smooth puree. Set aside.
- Preheat oven to 200 °C (400 °F). Line a baking sheet with parchment paper.
- In a large bowl, beat the milk, the maple syrup, the eggs and the melted butter. Drop the bread slices and let macerate for about 10 minutes, turning occasionally.
- Quickly drain the bread slices and place on the baking sheet.
- Bake for about 7 minutes. Turn the slices over and continue cooking for another 7 minutes.
- Arrange the stewed fruits in the middle of four serving plates, pressing down slightly on the fruits to spread them out. Place a slice of Nutty French toast on each plate. Top with 30 ml (2 tbsp.) of yogurt and chopped walnuts.
Tips and tricks
If you're preparing brunch, you will find it far more convenient to make your French toast on a baking sheet instead of in a pan, one slice at a time. You can then quickly arrange the warm French toast onto plates and serve.
